New Product Wednesdays: FIVE NEW PRODUCTS for Fabulous Salad Fixins ...

No one would ever confuse me with Martha Stewart.  EVER.  I tend to choose recipes based on how short and uncomplicated they are.  But I love recipes that make it look like I slaved all day.  Today's blog post shares one of my favorite recipes that look complicated, but is soooooo easy to make.

One of my favorite recipe websites is Rachel Rappaport's Coconut and Lime.   Last January, I threw a large party for the Tampa Bay area's biggest all day pirate party and wild drinking festival - The Gasparilla Pirate Festival.  I wanted to spend my time enjoying cocktails with my guests, not being tied to the kitchen.  So I whipped out the Crock Pot slow cookers.  I laid out trays of flavored tortilla wraps and julienned veggies.  Then in the slow cookers - in one I had pulled chicken tossed in a Buffalo hot wing sauce.  In the other slow cooker, I had Rachel Rappaport's recipe for Blueberry Pulled Pork.  Rachel's recipe is ridiculously easy to put together.  Throw a few ingredients in a slow cooker and cook on low.  Rachel's recipe says to cook on low for 8-10 hours but I usually do 12 hours so that the pork roast falls apart.  My guests helped themselves to pork and buffalo chicken wraps all day and I could help myself to plenty of cocktails and great conversation.

As Gasparilla 2012 is approaching, I remembered Rachel's fabulous recipe and was craving Blueberry Pulled Pork but on a salad.  Since this is New Product Wednesday, I'll be sharing information on several "new products" (new to me) that I put on my "Everything but the kitchen sink Blueberry Pulled Pork Salad."

Now traditionally, pulled pork salads include black beans, cheddar cheese, corn kernels, tortilla strips and a fatty dressing.  Now don't get me wrong - that sounds incredibly delicious.  But I wanted to try to lighten up my salad a little bit.  No starchy corn, no cheese, no deep fried tortilla strips, no fatty dressing.  But I did add in a few items that are probably just as bad.  So take a look at what I put on my salad and feel free to omit the unhealthy items!

I woke up early and threw a pork roast into the slow cooker using Rachel's recipe for Blueberry Pulled Pork.  I doubled the number of garlic cloves and blueberries that Rachel's recipe called for and cooked on low for 12 hours.

After 12 hours, the contents of the slow cooker looked like this ...


I removed the pork roast from the slow cooker and it was already falling apart tender.


Using two forks, I pulled the pork roast into shreds.  Meanwhile, I mashed up the sauce that remained in the slow cooker.


I then took the shredded/pulled pork and put it back in the slow cooker and thoroughly combined it with the sauce.

At this point, I recommend you could serve delicious pulled pork sandwiches on Hawaiian sweet bread.  Makes a great meal.  However, I was in the mood for a big salad.

Lily On The Lam Readers may know that I have an affinity for serving ware with cats on it.  But today, we're going fishy ...  This is one of my favorite "Big Salad" serving platters.  It easily holds salad for 2-4 people or one incredibly hungry person.


I purchased this fish-shaped platter at Oceanic Supermarket in Tampa, Florida.  I love Asian grocery stores!  I started my Monster-sized salad with sliced hearts of romaine and diced red onion.


I love salads chock fill of vegetables.  I halved big cherry tomatoes and threw them in.  Remember, I'm not a food stylist!


Next, sliced cucumbers and sliced carrots.  OK I cheated, the carrots came pre-sliced.  I didn't use a french fry wavy cutter on them.  At least I am honest, people!


Next up- diced red bell peppers (or capsicum, if you're Australian/British).  I love bell peppers.  They are chock full of Vitamin C and add a juicy crunch.  I also added sliced celery.  You may also want to try water chestnuts if you're looking for a crunch without adding fat/calories of nuts or croutons.


Now to add in some richness but a healthy fat - I diced avocado and then squeezed lemon juice on the avocado so it would not brown/oxidize quickly.



And since it's New Product Wednesday, I grabbed some summer sausage sticks from Nueske's.  If you want the best bacon in the world, check out Nueske's of Wisconsin.  It is insanely good.  Their summer sausage is pretty darn tasty too!  The summer sausage brought out the smokiness of the pulled pork and added a decadent richness to my salad.

 And don't forget the blueberry pulled pork!  I made three little mounds of gently warmed pulled pork on top of the salad.  This would make a hearty appetizer salad for 3-4 people.


Because of the richness of the avocado, summer sausage and pulled pork, I wanted a light dressing.  And since it's New Product Wednesday, I chose Wishbone Salad Spritzers Balsamic Breeze vinaigrette dressing spray.  I have used their Caesar and their Italian and was happy that the Balsamic Breeze packed a great punch too.  


I sprayed the top of my salad with this tart dressing spray.  But while I saved calories by using a salad spritzer, I had to add some fat and decadence with another New Product Wednesday item: Fresh Gourmet Garlic Pepper Crispy Onions.  I seriously could eat these yummy garlic pepper crispy onions on anything.  They add a crispy, buttery, oniony crunch and they are so good.  I won't use regular fried onions in my green bean casserole again.  The garlic pepper ones are amazing.


And with a generous dusting of Fresh Gourmet Garlic Pepper Crispy Onions, my monster everything but the kitchen sink salad was complete.  Look at it - total monster!


I knew I needed a smaller plate for myself ... lucky I had a little fish dish!  My biggest regret was not buying more of the little fish platters.  Sigh ...


But wait!  It's New Product Wednesday - I need to add some heat to this salad, before serving.  I found Victoria Taylor's Seasonings Jalapeño Pepper Flakes at Rolling Pin Kitchen Emporium in Brandon, Florida.  This product is fantastic.  When I want to add a bit of heat, a sprinkle of jalapeño pepper flakes does the trick.



And for a little more heat and smoky complex flavor, I sprinkled on a dash of Target's Archer Farms ground chipotle peppers.


This heavenly, rich, decadent salad made four servings and utilized over a month's worth of New Product Wednesday items!  Check out the great products in your next salad!

Happy 5000! Dim Sum, Stubble Burn and a Happy, Happy Lily!

Happy Sunday Lily On The Lam Readers:

My page view counter hit 5000 today and I felt I should celebrate by giving you all $5000 dollars.  Then I realized I did not win the lottery, so instead I will give you all a "thank you" for reading my blog instead!  You can buy slightly less plasma TVs with my sincere thanks than you can $5000, but TV is over-rated anyway!

This weekend has flown by.  I have a slight case of stubble burn on my chin.  The unfortunate but deliciously earned by-product of kissing "The Bad-ass Bandit" for hours and hours and hours this weekend.  I will gladly suffer stubble burn for kissing such a hot man.  Also, in trying to find a link on how to prevent stubble burn to include in this blog post (LilyOnTheLam.com is all about solutions to life's problems!), I found out that my use of salicylic acid products actually makes my face more sensitive and therefore more prone to stubble burn.  Great, so I brought this on myself?  Too sensitive and too prone to make out for long periods of time!  The list of "failures" just keep adding up-- ha ha ha! 

I had been referring to my plight as "beard rash" until I found it was a euphemism for something else on UrbanDictionary.com.  I have to study up on my euphemisms!  (For more on "The Bad-Ass Bandit, check out my last blog post "Lizard Blocked: How an Albino Gekko is Ruining My Seduction Efforts."

My cat, Oshi (a.k.a. "Oshikuru Kitten Samurai" named after Oshikuru Demon Samurai - if you watch "The Big Bang Theory" and "Two and a Half Men") is laying on the bed spinning his head around as he watches the ceiling fan go around and around and around.  I sometimes suspect Oshi is a stoner with his own personal supply of catnip.  If I could read his mind, I have a feeling he would say "Have you tried this strain of Jamaican Poontang catnip?  Dude, it's outta this world!"  (Side note: To the disappointed Rasta porn-seekers who found this blog post by Googling "Jamaican Poontang," I apologize whole-heartedly.)

Oshi Cat:  The eyes and ears say "I'm cute!"  The extended tongue says "I'm a rebel!"

Oshi is now trying to lay his head on my keyboard as I am typing.  I suspect he's trying to say "I'm on your blog?  Call my agent!"

I feel like the post after 5000 page views should be a really "Knock the ball completely out of the ball park" post.  But I'm a little brain-dead, so instead I am going to blog about one of my favorite things to do on a Sunday ... having dim sum!

If you do not know what dim sum is, it is basically like tapas but Asian.  Little plates of tasty bites, sometimes brought around on carts where you can pick and choose to your heart's content.

When I was in Sydney, Australia, I discovered that they refer to "dim sum" by the Cantonese term: "yum cha."  My favorite "yum cha" restaurant in Sydney is East Ocean Restaurant.  If you're in Sydney, please make sure you go there.  I love their mango and cream pancake rolls, which I have never seen at dim sum in the United States.  They are heavenly!

My friend NL (a.k.a. "The First Lady of Lynchburg") came back to Tampa Bay recently for a visit.  Her two demands were (1) to go to Oceanic Supermarket - the Asian grocery store and (2) to go for dim sum.  I love Oceanic Supermarket.  They always have incredibly fresh produce.  Where else in Tampa Bay can you buy fresh dragon fruit?  I like to stock up on all the lovely Asian marinades and sauces that I cannot find in my traditional grocery stores. 

For NL's dim sum craving, I chose China Yuan Seafood Restaurant on Armenia Avenue.  While China Yuan usually does not serve dim sum on carts you can get dim sum there any time day or night versus the traditional brunch/lunch hours only.  I find it's very important to have an outlet where you can indulge your dim sum craving at any time.  My body doesn't know how to only crave dim sum during brunch hours!   

I also recommend T.C. Choy's Asian Bistro and the 2 locations of Yummy House China Bistro, if you're looking for dim sum in the Tampa Bay area.  However, China Yuan is my favorite in Tampa.  As an added bonus, there's a great Asian bakery in the same shopping complex as China Yuan.  Dim sum and then pastries to go?  Win-win!

I recommend the Chinese sausage and green onion rolls from the Asian bakery.

If you are a dim sum newbie, one of the perks of going to China Yuan is that they have a picture menu for all of their dim sum specialities.


Being a creature of habit, I have some basic dim sum items that I always make sure to order:

sticky rice steamed in leaves






turnip cakes (a.k.a. radish pudding)


Grab the condiments and top the turnip cakes with red vinegar and chili sauce.

And if you want to order off the regular menu, I recommend the beef and vegetables pan-fried noodles.  Baby bok choy is a must!



Being a Chinese restaurant, China Yuan also gives you a fortune cookie at the end of the meal.  Here is my fortune - a true statement if I ever heard one.

New Product Wednesday: Hapi Snacks Spicy Sriracha Peas

March 7, 2012 Update:  I am super excited that my local Super Target now sells Hapi Snacks Spicy Sriracha Peas!


I like spicy, tart flavors.  I love sushi.  I even dig the "oh my God, my head is going to explode via my nasal passages" screaming pain that occurs when I eat too much wasabi.  Pain can sometimes be good when eating! 


Given all this, I am a fan of wasabi peas - peas coated in fiery Japanese horseradish.  However, like eating ice cream too fast can cause a splitting ice cream headache; gobbling too many wasabi peas at once can cause a massive sinus headache.


When the First Lady of Lynchburg (my pal NL) was in Tampa for the weekend, she demanded we make a stop at one of our mutual loves - Oceanic Asian Supermarket.  I love a good Asian market and Oceanic is my favorite in the Tampa Bay area.  Where else can you get dragon fruit, Asian pears and shrimp chips?  The produce at Oceanic is always fresh and much cheaper than I can find at the mainstream local grocery stores.  Even if you just want to pick up some good quality, inexpensive lemons, limes and garlic - that is reason enough to stop at Oceanic.


While shopping with NL, I spotted a red can near the wasabi peas.  What was this?  Sriracha peas!  WHAT?  When did they start making sriracha peas?  I love spicy red chili sriracha sauce!  I had to check this out! 






I bought a can of Hapi Snacks Spicy Sriracha Peas - chili garlic coated green peas and I was NOT disappointed.  It had all the crunch and zest of wasabi peas but without the nasal-piercing heat.  Quality snacking here!
